Overnight oats are a quick and nutritious breakfast option that are easily made the night before.

This dairy free healthy overnight oat recipe is one of my favourites especially in summer when I’m working long days and need a breakfast that’s conveniently ready made. It’s so simple, healthy and filling, just layer into a jar, pop the lid on and off you go!

Recipe:

1 cup / 95g of whole oats

1 1/4 cups / 310ml of non dairy milk such as unsweetened almond/nut milk or organic unsweetened soya milk

2 tablespoons of whole chia seeds (available in most health food shops)

4 drops of medicine flower vanilla extract or 1 teaspoon of regular vanilla extract

Sweetener of your choice, I use 1-2 teaspoons of raw Manuka honey or 1-2 tablespoons of maple syrup

Mix all of the above ingredients together and place into a sealed container and leave overnight in the fridge. The oats will be ready in the morning, so scoop out the amount you want adding mixed nuts, seeds, dried or fresh fruit – whatever flavour and texture combinations you like. I layered mine in the picture above with a home made soya milk kefir for a probiotic boost topped with fresh fruit. Overnight oats are not only limited to breakfast, they also make a quick light lunch especially if you need food on the go.

The addition of chia seeds to the oats give this breakfast a healthy boost of omega 3 which are reported to be lacking in our modern day diets, if you are vegetarian or vegan then chia seeds are one of the highest vegetarian sources of omega 3 fatty acids which are know to have an anti inflammatory effect within the body. They are also high in fibre and quality protein, and contain calcium, magnsesium, iron, selenium and zinc amongst other vitamins including antioxidants too. These little seeds add a powerful nutritional punch to these overnight oats making them healthy fast food on the go!
