Sweet potatoe is loaded with health benefits but I tend to find it a bit too sweet in savoury dishes so making use of its taste and textures makes it perfect for chocolate treats like this.
The natural sugars from sweet potatoe won’t spike the blood sugar but instead releases the sugars slowly into the blood stream. They are high in carotenoids which have a protective and anti ageing effect on the body and are high in vitamin C too which helps the skin with producing collagen maintaining its youthful appearance and accelerating wound healing. To help with the uptake of the beta-carotene from the sweet potatoe I’ve included some healthy fats in this recipe in the form of cashew butter and coconut oil. Carotenoids are the precursor to vitamin A which is a powerful antioxidant with anti ageing and immune boosting properties so increasing the uptake makes the recipe more nutritious. This sweet potatoe chocolate fudge is not only healthy but also skin friendly with anti ageing properties too!
Recipe:
1 small sweet potatoe roasted till soft, leave it to cool then remove the skin and place into a food processor with the rest of the ingredients below:
2 tablespoons of cashew butter (or nut butter of your choice)
1 teaspoon of vanilla extract
4 tablespoons of cacao/cocoa powder
2 heaped tablespoons of of coconut flour
2 tablespoons of coconut oil (solid measure) then melt before adding
3 tablespoons of maple syrup
Mix everything together in the food processor then spread onto greaseproof paper and freeze for a few hours, cut into squares and store in the fridge (or freezer) in an airtight container.
